Tea Loaf is a classic, fruity cake, packed with plumped tea infused raisins and sultanas. Usually served in thick wedges and spread with butter.
Ingredients
- 170 g Sultanas
- 170 g Raisins
- 1 Orange Zested
- 200 g Soft Brown Sugar
- 250 g Self-Raising Flour
- 2 Medium eggs
- 300 ml Hot Strong Earl Grey Tea
Method
- Brew 300 ml of Strong Earl Grey Tea
- Add Raisins, Sultanas, Orange Peel and Tea to a large flat oven tray. Place in fridge for 24h to plump.
- Heat Oven to 180 DegC
- Mix Eggs, Flour, Sugar & Soaked Fruit and empty into loaf tin.
- Heat at 180 DegC for 90 min or until firm
- Cool in Tin for 15 min
- Cool further foiled.
