Apple Cinnamon bread is a variant moist, sweet, cake-like quick-bread. One of my experiments with a traditional flavour combination.
Ingredients
- 100 g Softened Butter
- 175 g Caster Sugar
- 225 g Self-Raising Flour
- 2 Medium eggs
- 400 g Peeled & Cored Apples
- 2 tsp Cinnamon powder
- 1 tsp Baking Powder
- 2 tbsp Semi-Skimmed Milk
Method
- Warm Oven to 180c
- Soften the butter in the oven (not microwave).
- Peel, core and weigh out 400g of Apple. Dice the weighed fruit to about 5 mm.
- Mix the diced apple and cinnamon until apples are coated.
- Mix all ingredients except the fruit in a large mixing bowl until doughy.
- Mix in the cinnamon apples
- Spoon dough into a non-stick 2lb bread baking tray.
- Add to oven for 30 – 45 minutes.
- Remove from oven and rest.
- Slice thickly and serve.
